Almond Rice


        1 1/2 cups cooked rice

        1 cup grated cheese

        1/2 cup warm milk

        1 tbsp. Butter or margarine

        Salt, pepper and paprika to taste

        3 eggs, yolks and whites separated

        1/2 cup chopped blanched almonds

Heat oven to 375 deg F. Put rice, cheese, milk, butter and seasonings in top of double boiler; cook over hot water until cheese melts. Let mixture cool slightly, then add slightly beaten egg yolks and almonds; fold-in stiffly beaten egg whites. Turn into a greased casserole, set in a shallow pan of water, bake for about 30 minutes. Serves
